I made these egg cups the other day for a brunch. They were a hit! Easy, healthy, and even paleo friendly, these egg cups are great to make ahead of time for breakfast to go. The prep and cook time was under 30 minutes. Try them out, and even try mixing up ingredients!
Sausage and Bell Pepper Egg Cups
1 pound sweet Italian sausage
1/2 cup bell pepper, diced
1/4 cup onion, diced
1/4 cup milk
1/2 tbsp vegetable oil
1/2 tsp baking powder
Salt and pepper
Cheddar cheese, grated (if desired)
- Preheat oven to 375 F.
- Over medium heat, brown Italian sausage until it is no longer pink, about 5 minutes. Remove from heat and stir in bell pepper.
- In a large mixing bowl, whisk together eggs, milk, oil, and baking powder. Season with salt and pepper.
- Spray a 12 cupcake pain with oil. Spoon the sausage mixture evenly into each cup. Ladle the egg mixture over the sausage mixture.
- If desired, sprinkle with cheddar cheese.
- Bake for 15-20 minutes.
