Cauliflower Pizza Crust (Recipe)

I have been hiding under a rock. Friends definitely told me about Cauliflower Pizza Crust and how delicious it is, but we just never got around to making it in our household. 
There is something about pizza that is just so sacred. I think we were scared to mess up the beauty of cheese and pepperoni by doing something weird like making cauliflower crust. 
Well, we were wrong. This recipe is FANTASTIC. 
I was amazed at how good the crust was and how awesome the pizza tasted. It was even good leftover. 
It is definitely different than flour crust. Still really good. The crust is dense enough to not get all soggy and still firm enough to support mega ingredients (like ours pictured above!). 
My daughter ate this up. She literally said “Nom, nom nom” while doing so. 
Make it! You will love it! It is gluten free and semi healthy (minus the cheese, but you gotta have cheese in this recipe). It is a crowd pleaser. People won’t know it is made of cauliflower. 

Cauliflower Pizza Crust
Cook Time: 20-25 minutes
Makes: 2

1 cup cooked cauliflower, riced (one head should make about 3 cups rice cauliflower- you can store remaining amount to make more pizza crusts or keep in refridgerator for about one week)
1/2 cup Parmesan cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
Olive Oil
Shredded Cheese, Marinara Sauce, and Toppings!

To “rice” the cauliflower:
Chop the cauliflower florets into chunks and steam them on the stove or in a steamer until soft. It should take about 15-20 minutes. Then place in a ricer or grate into fine pieces. It should look like rice!

Preheat oven to 450 degrees.
In a medium bowl, mix the cauliflower, egg, and cheese. Add the crushed garlic, oregano and garlic salt. Mix well.
Add parchment paper or olive oil to pizza stone or baking sheet.
Transfer to the baking sheet or a pizza stone and pat out into a round crust, about 9″. Brush with olive oil.
Bake for 20-25 minutes, or until crust is golden brown.
Remove from oven. Add sauce, toppings of choice, and cheese. (We used onion and pepperoni)
Place under broiler for 4 minutes.
