Soft-Baked Funfetti Sugar Cookies

Ingredients:
- 1/2 cup unsalted butter, softened to room temperature
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1.5 cups all purpose flour
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cream of tartar (you must use this to get the cookies fluffy!)
- 1/2 cup sprinkles plus a bit for sprinkling on after
Directions:
Cream the softened butter for about one minute on medium speed using either a hand mixer or stand mixer. Once it is smooth, add the sugar until light and fluffy. Add the egg and vanilla. Set aside.
In a medium sized bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar. Slowly add the dry ingredients into the wet ingredients and mix on low. The dough is going to be thick, so be prepared! Fold in the sprinkles.
Using a spoon, take a section of dough (about 1-2 tablespoons each) and roll into balls. Add a bit of sprinkles on each ball by gently pressing into sprinkles on a plate.
Chill the balls of dough in the refrigerator for at least 2 hours but up to 48 hours in the fridge. It will help prevent spreading. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or a baking mat.
Bake the dough for 8-10 minutes. The cookies will seem soft. Don’t worry! They will taste great! Allow them to cool for about 5 minutes and then transfer to a wire rack.
