Soft-Baked Funfetti Sprinkle Sugar Cookies! (Christmas Recipe)

Want the fluffiest, butteriest, yummiest, sprinkle cookie this Christmas? Look no further- soft baked funfetti sugar cookies are here! After scouring the internet for a cookie recipe that is simple but makes thick and fluffy cookies, I came across this gem. My daughter is obsessed with sprinkles (what child isn’t, come on, what adult isn’t). I have been desperately wanting to find a great sugar cookie recipe that comes out fluffy and soft, similar to those Lofthouse cookies you find at the grocery store with all the yummy frosting on top. These are delicious. They are soft, thick, pillowy, and buttery! 
Bonus: these cookies are easy to make, use simple ingredients (well, except one, but totally worth it!), and look really pretty on a platter for the holidays. They only take 8-10 minutes in the oven. I have tripled this recipe to make about 4 dozen cookies. Or simply make a small batch for your family. Either way, they will be gone quick!
I have taken these soft-baked funfetti sugar cookies to a couple holiday parties, and they were the first to go (especially among younger crowds!). They are easy to make and SO good. My husband does not like sugar cookies, and he loved these. P.S. I have made these also with normal sprinkles and they look just as pretty! I will post those another day, but for Christmas, definitely use green and red sprinkles!

Soft-Baked Funfetti Sugar Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups all purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cream of tartar (you must use this to get the cookies fluffy!)
  • 1/2 cup sprinkles plus a bit for sprinkling on after

Directions:
Cream the softened butter for about one minute on medium speed using either a hand mixer or stand mixer. Once it is smooth, add the sugar until light and fluffy. Add the egg and vanilla. Set aside.

In a medium sized bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar. Slowly add the dry ingredients into the wet ingredients and mix on low. The dough is going to be thick, so be prepared! Fold in the sprinkles.

Using a spoon, take a section of dough (about 1-2 tablespoons each) and roll into balls. Add a bit of sprinkles on each ball by gently pressing into sprinkles on a plate.

Chill the balls of dough in the refrigerator for at least 2 hours but up to 48 hours in the fridge. It will help prevent spreading. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or a baking mat.

Bake the dough for 8-10 minutes. The cookies will seem soft. Don’t worry! They will taste great! Allow them to cool for about 5 minutes and then transfer to a wire rack.
