I am obsessed with roasting all of my vegetables. Recently I was on a trip and had the most delicious roasted cauliflower. I had to try to recreate it at home. We love this recipe and it usually goes quick!
The combination of lemon, olive oil, garlic, and pine nuts make it rich and hearty.
Give it a shot and pair with some marinated chicken. Yum!

1 Head Cauliflower
1/4 cup olive oil (extra virgin is better)
1 tsp curry powder
2 tsp kosher salt
pepper to taste
5 cloves garlic finely sliced
2 tsp lemon juice
1/4 cup pine nuts
Preheat oven to 450 degrees. Wash and cut cauliflower. Toss in a bowl with all ingredients, covering cauliflower evenly. Transfer to a baking sheet lined with parchment paper. Bake for 15-20 minutes. Flip once or twice to ensure even cooking.
