Gluten Free Banana Pancakes

I love breakfast. My favorite breakfasts are here at home. I love sleepy, slow-moving mornings in my jammies. I love hearing my little girl pitter pattering around the house getting into things. I love being oh-so-lazy with my husband and staying in our pajamas as long as we can… lingering in the blissful mornings moments.

These are our favorite pancakes. We make them when we want something sweet, hearty, and filling. They are so fluffy and delicious, you hardly can tell they are gluten free and semi healthy. Try making a fruit puree with them- mango is especially yummy. 

//Gluten Free Pancakes
1.5 cups brown rice flour 
1cups brown rice flour

1/4  teaspoon cinnamon

1/4 teaspoon salt

1 teaspoon baking powder

2 eggs

3/4 cup almond or soy milk

1 tablespoon coconut oil

1 teaspoon vanilla

1 tablespoon agave nectar

2 bananas

Mash bananas in a large mixing bowl. Add ingredients. Whisk until light and fluffy. Heat non-stick pan over medium heat and grease with coconut oil or non-stick spray. Add pancake to heated pan and cook until …bubbly, flip and enjoy!
