This time of year makes me want to sleep often and eat really hearty foods. Not a good combo. The other day I was craving potatoes. Or maybe french fries. Salty goodness.
I have always made roasted potatoes but I suppose I haven’t been adding enough garlic and olive oil, because this recipe was my fave. These potatoes are keepers in this household. Next I want to try sweet potatoes.
Anyways, I made a big batch and we ate them all up pretty quick. Try them at Thanksgiving or on a Friday night. They are so easy and so good.
Garlic and Thyme Roasted Potatoes Recipe
Adapted from this recipe
3 pounds small red potatoes
1/4 cup olive oil
4-6 minced cloves of garlic (the more the better!)
1 1/2 teaspoons kosher salt
2 tablespoons minced thyme
Pepper to taste
Preheat oven to 400 degrees. Cut potatoes in half or quarters. Put potatoes in a large mixing bowl. Add olive oil, minced garlic, salt, pepper, and thyme and combine until all potatoes are evenly covered. Put potatoes on a large roasting pan and roast for about 45 minutes to one hour, flipping about half way. Let cool.
