Happy Thanksgiving


Let us come before him with thanksgiving and extol him with music and song.

For the LORD is the great God, the great King above all gods.

Happy Thanksgiving- from our family to yours. This Thanksgiving I am thankful for many things… the precious miracle baby in my womb that is a blessing and gift from God alone. In no way could I have conjured up such a gift. I struggled to get pregnant and almost gave up hope. But He waited until I had lost confidence in myself so I could truly see How great He is at gift-giving.

My daughter lights up my life. As she grows, I see snippets of her lovely little soul. When I hear her speak her tiny little prayers, my heart praises God for what he is doing in her life despite my very non-perfect parenting. I have so much hope in her future and love getting to be her mother.

What can I say about my husband? He is my best friend, my confidant, and my greatest romance. As the years continue we have both achieved our first gray hairs together. Yippee. We have our seasons, but one thing remains the same: I love him more each day and continue to learn more about his heart as time goes on. I respect him more each day. I trust that God is continuing to work in his life.

Other things… the home we don’t deserve but get to dwell in. The job my husband has been blessed with which provides food for our table and allows me to work at home with my daughter. The church family I get to enjoy on a regular basis and that feeds my soul. The neighborhood we live in that has been free of violence or fear. The hardships I have endured that give me a glimpse into my need for Jesus and compassion for the hurting world, along with refining me to be more humble and rely on God. The family I have been blessed with- my father and mother, the step-parents I have inherited, in-laws, sisters and brothers, grandparents… so many people that add joy to my life in ways I could never know. The health I have for now… how often I forget what freedom it is to live without daily pain. While many of these blessings may not last forever, or for even another week, they are things I can be thankful for today.

Christine is teaching how to really “Kick Butt” on Pinterest using board booster. I am one that struggles with my pinterest game. I am sure many more of you feel the very same and like myself constantly look for way to up your game. Ever heard of Board Booster? I personally had not until I read Christine’s post. Regardless if you are looking to up your Pinterest game or not I sincerly recommend you check out Christine’s blog. She is an amazing blogger that posts some awesome how-to blog posts. Slow Cooker Sweet Potato, Quinoa, Black Bean Chili


Every fall I get a major craving for chili. So hearty, savory, and delicious- and easy too! I have already been in the mood for winter food. Something about soups and chili make my heart so happy. This is an easy recipe- Slow Cooker Sweet Potato, Quinoa, Black Bean Chili that is super healthy. I had a bag of sweet potatoes I needed to use up, so I got the idea to make this chili I made over a year ago. I loved it so much I tweaked the recipe and made it a second time for my family. This is a great dish to make ahead and freeze, or to take to a potluck. I think you could sub regular potatoes for sweet, and it would still be a hearty chili without the ground beef (for a vegetarian dish). We actually had elk from a family friend that has been sitting in our freezer so we used it and it turned out great. I have also made it with ground turkey, ground beef, and simply vegetarian.


This recipe is so easy because all you do is throw all the ingredients into your crockpot, turn it on, and cook it low for eight hours. That is it! It doesn’t come out mushy, and it is super flavorful. You will see in my recipe below that it is optional to add some salsa. I added it recently and loved the way it came out, but it tastes just as good without.

Some fun ideas for toppings are avocado, tortilla chips, fritos, sour cream, greek yogurt, and cheese. Cilantro would also taste great.

Crockpot Quinoa, Sweet Potato, and Ground Beef Chili
Easy and delicious weeknight meal sure to please the whole family!
Recipe type: Dinner
Cuisine: Southwest
Serves: 6-8 servings
  • 1 pound ground beef, browned, drained, and rinsed
  • 1 can black beans, drained and rinsed
  • 1 6 oz can tomato paste
  • 2.5 cups chicken broth
  • ½ cup quinoa, rinsed
  • 1 yellow onion, diced
  • 1 jalepeno
  • 2 large sweet pepper or bell pepper
  • 1 tablespoon cocoa powder
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon chili powder
  • 1 tablespoon cocoa powder
  • 2 teaspoons ground cumin
  • ¼ teaspoon paprika
  • 1 teaspoon salt
  • Pepper to taste
  • Garlic powder to taste (I am an addict for garlic powder!)
  • ½ cup salsa (optional)
  1. Combine all ingredients in a large crockpot. Brown ground beef, drain and rinse, and add to mixture in crockpot. Cook on low 7-8 hours. Enjoy!
  2. Garnish with sour cream, greek yogurt, diced avocado, tortilla chips/ fritos, or shredded cheese!
