Slow Cooker Sweet Potato, Quinoa, Black Bean Chili

Every fall I get a major craving for chili. So hearty, savory, and delicious- and easy too! I have already been in the mood for winter food. Something about soups and chili make my heart so happy. This is an easy recipe- Slow Cooker Sweet Potato, Quinoa, Black Bean Chili that is super healthy. I had a bag of sweet potatoes I needed to use up, so I got the idea to make this chili I made over a year ago. I loved it so much I tweaked the recipe and made it a second time for my family. This is a great dish to make ahead and freeze, or to take to a potluck. I think you could sub regular potatoes for sweet, and it would still be a hearty chili without the ground beef (for a vegetarian dish). We actually had elk from a family friend that has been sitting in our freezer so we used it and it turned out great. I have also made it with ground turkey, ground beef, and simply vegetarian.

This recipe is so easy because all you do is throw all the ingredients into your crockpot, turn it on, and cook it low for eight hours. That is it! It doesn’t come out mushy, and it is super flavorful. You will see in my recipe below that it is optional to add some salsa. I added it recently and loved the way it came out, but it tastes just as good without.

Some fun ideas for toppings are avocado, tortilla chips, fritos, sour cream, greek yogurt, and cheese. Cilantro would also taste great.

Crockpot Quinoa, Sweet Potato, and Ground Beef Chili
 
Easy and delicious weeknight meal sure to please the whole family!

Serves: 6-8 servings
Ingredients
  • 1 pound ground beef, browned, drained, and rinsed
  • 1 can black beans, drained and rinsed
  • 1 6 oz can tomato paste
  • 2.5 cups chicken broth
  • ½ cup quinoa, rinsed
  • 1 yellow onion, diced
  • 1 jalepeno
  • 2 large sweet pepper or bell pepper
  • 1 tablespoon cocoa powder
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon chili powder
  • 1 tablespoon cocoa powder
  • 2 teaspoons ground cumin
  • ¼ teaspoon paprika
  • 1 teaspoon salt
  • Pepper to taste
  • Garlic powder to taste (I am an addict for garlic powder!)
  • ½ cup salsa (optional)
Instructions
  1. Combine all ingredients in a large crockpot. Brown ground beef, drain and rinse, and add to mixture in crockpot. Cook on low 7-8 hours. Enjoy!
  2. Garnish with sour cream, greek yogurt, diced avocado, tortilla chips/ fritos, or shredded cheese!

    Chili is one of those stick-to-your-ribs heart warming meals that my Mom always cooks for me when I’m home visiting (a 10+ hour flight away, yeesh!). I can’t wait to go back for Chrsitmas and fill my belly. Then again I suppose I could make my own! Ha!
