Summer foods are upon us. Yes! I love salads, and especially love them during the hot months. This is one of my current favorite salads. I love this one because it is really easy to throw together last-minute. We start with fresh organic dino and italian kale. I love kale. Love, love, love kale. Next wet grilled corn and zucchini quite possibly the yummiest thing on the earth! We kept it refrigerated and added it as needed. I also added some pickled red onions. Do you make these? They are so easy to do at home and last for a couple of weeks and taste great added to salads, sandwiches, and more. Then I toss the salad in some olive oil and lemon juice (fresh or fresh squeezed). Top it off with a sprinkle of chia seeds, and done! Instant lunch or dinner. Pair it with some sliced flank steak or chicken if you want a little bit of protein. Sprinkle on some salt and pepper for an extra kick.
You will love this salad. I promise. Take it to a friend’s house and watch them ask the question “are there chia seeds in this??!”. Most people are amazed that chia seeds taste amazing in salads. I know I was the first time.
