One of my all time favorite desserts is simple: a good brownie with ice cream on top. For some reason a rich, gooey brownie topped with ice cream is the perfect combination of decadence and creaminess. We’ve entered spring, and I’ve been craving ice cream like crazy! That’s when I got this crazy idea to make a homemade ice cream cake. Brownie bottom ice cream cake to be exact. Ice cream cake is such a treat and reminds me of special birthdays growing up in the hot desert. It’s been so warm that I wanted to make a delicious and fun spring time dessert.
This recipe was too good and simple not to share and is perfect for the warm spring and summer months! Kiddos and adults alike loved this!
- Brownie Boxed Mix and Ingredients needed
- Blue Bunny® PB 'N Cones™ Ice Cream (I used about ¾ tub)
- Whipped Cream (1 container, I used about half)
- Sprinkles of choice
- Bake brownies (I used a store bought box and followed the directions) in a 8x8 pan
- Let brownies cool for about 30 minutes
- Soften ice cream for about 5 minutes on the counter
- Spread a thick layer of ice cream on top of brownies
- Add a layer of whip cream
- Add a lovely and generous layer of sprinkles
- Freeze for 2-3 hours
- Serve cold and enjoy!

This recipe was gone in a day or two and was a hit with both kids and adults. It tastes extra delicious out of the freezer and microwaved for just 5 seconds. I had to stop myself because I wanted to keep eating it!
