Crockpot Quinoa, Sweet Potato, and Ground Beef Chili

Easy and delicious weeknight meal sure to please the whole family!
Ingredients
  • 1 pound ground beef, browned, drained, and rinsed
  • 1 can black beans, drained and rinsed
  • 1 6 oz can tomato paste
  • 2.5 cups chicken broth
  • ½ cup quinoa, rinsed
  • 1 yellow onion, diced
  • 1 jalepeno
  • 2 large sweet pepper or bell pepper
  • 1 tablespoon cocoa powder
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon chili powder
  • 1 tablespoon cocoa powder
  • 2 teaspoons ground cumin
  • ¼ teaspoon paprika
  • 1 teaspoon salt
  • Pepper to taste
  • Garlic powder to taste (I am an addict for garlic powder!)
  • ½ cup salsa (optional)
Instructions
  1. Combine all ingredients in a large crockpot. Brown ground beef, drain and rinse, and add to mixture in crockpot. Cook on low 7-8 hours. Enjoy!
  2. Garnish with sour cream, greek yogurt, diced avocado, tortilla chips/ fritos, or shredded cheese!
