The Pimm’s Cup (+ giveaway)

We like to keep things easy around here. Especially after a day full of yard work.
I wish I could say we had a reason to go out. I stare longingly at my pretty summer dresses and wedges that go unused. We had no where to go, and nothing much to do. After a long day of chores, we both wondered what the heck we would eat for dinner and how we could spend the last few hours of our Friday night.
I considered showering and putting on a nice dress. Upon one gaze at my husband in his work shorts and tee shirt, and my daughter in her Yo Gabba Gabba nightgown and no pants, I decided that would be silly.
Please, pay no attention to the dirty kitchen in the background! 
However, we still decide to treat ourselves to a “happy hour” at home. Our deck is just right for a mock cocktail evening- a few chairs to lounge in, a nice shade tree, and a gorgeous view of our neighbors if we are in the mood to be nosy.

This drink is delicious. We were able to use fresh mint from our garden. Refreshing and slightly sweet, it is a new favorite for us around here. It paired fantastic with some homemade pasta Brian made (showoff). Cheers to a long day of yard work and house cleaning with the love of my life.

Pimm’s Cup//
serves 2
1/2 cup Pimm’s No. 1
6 oz ginger beer or ginger ale
2 cucumber slices
2 fresh mint leaves
Fill highball glass with ice. Add Pimm’s, then top with 
ginger beer, garnish with cucumber slice and mint sprig 
and serve.
