Kale, Sausage, and Potato Soup [recipe]

Serves: 12-14 servings
  • 4 cups 2% fairlife/ milk
  • 1 pound spicy Italian sausage
  • 2 cups Half and Half
  • 4 cups cubed potatoes
  • 4 cups chicken broth
  • 1 sweet onion
  • ¼ cup fresh oregano, chopped
  • pinch of red pepper flakes
  • ½ teaspoon black pepper
  • 2-3 cups kale, washed and cut into bite size pieces (I used 5 cups because we LOVE kale!)
  • salt to taste
  1. Heat a large pan over medium high heat and crumble sausage. Cook and stir about 10 minutes or until fully cooked and brown. Drain grease.
  2. In a large pot add half and half, chicken broth, milk. Stir in potatoes, oregano, onion, and red pepper flakes. Bring to a boil, then reduce heat and simmer for about 30 minutes or until potatoes are tender. Season with black pepper and salt. Stir kale into the soup and simmer on low until kake is tender, 10-15 min.
