No-Bake Honey Oat Almond Cereal Bars

Ingredients
  • 3 cups Honey Bunches of Oats with Almonds
  • 1½ cups old fashioned oats
  • ½ cup pecans, chopped (optional)
  • ¼ cup sunflower seeds (optional)
  • 2 tablespoons chia seeds (optional)
  • ¾ cup sweetened coconut flakes
  • ½ cup brown sugar
  • ¼ cup honey
  • 2 tablespoons butter
  • ¾ cup peanut butter
Instructions
  1. In a large mixing bowl, combine Honey Bunches of Oats with Almonds, oats, chopped pecans, sunflower seeds, chia seeds, and coconut flakes.
  2. Combine the honey, brown sugar, butter, and salt in a saucepan over medium heat. Bring to a boil for 1 minute.
  3. Remove from heat and add the peanut butter and vanilla and stir until smooth and creamy.
  4. Pour the peanut butter mixture over the cereal mixture and stir until well combined.
  5. Press the mixture into a 9x13 greased baking pan, or line it with parchment paper first. Press firmly until mixture is even. Cut excess parchment paper if needed.
  6. Bake at 300 degrees for 25-30 minutes. Once cooled, crumble using your hands or a couple of forks. Store up to one week in an airtight container, or freeze for longer storing. Serve with cold milk, over fruit, or with yogurt.
